To keep the kitchen cool and to remove cooking odors, an exhaust fan set into an outside wall will be found helpful.

Modern Kitchen Cabinets

Individual units for floor and wall permit craftsmen to build and install sizes that fit available space as in the typical kitchen illustrated at right:

THE KITCHENS in most old houses need remodeling more than any other part of the house. They are large rooms with plenty of wall space but with few cabinets. Conversion of the average old-fashioned kitchen is well within the means of the home craftsman. No structural changes are required. A series of new compact cabinets of both the wall and floor type are built in the workshop and brought to the kitchen ready for installation.
The sketch below shows the various types of cabinets for which complete working drawings, lists of materials and instructions are given on the following pages. Note the key numbers on the drawing because they will be used throughout the book for the ready identification of the various units.
The selection of the units should be left to the person who is to use them—the housewife—as she is in a much better position to know what type of cabinet will best suit her purpose. After the types of cabinets have been decided on, the next step is to determine the cabinet arrangement and the sizes of the cabinets that will be needed.

In order to determine the best layout of cabinets a floor plan of the kitchen should be drawn to scale. A convenient scale is 1" equals 1 ft. On this floor plan should be located the existing windows, doors and any fixtures that cannot be moved, such as the stove, water pipes and kitchen sink soil pipe.
